Cook Up a Delicious Dish of Jambalaya with this Recipe from Universal’s Mardi Gras

I LOVE Cajun food. While spending a good portion of my childhood in Louisiana, (Born: Baton Rouge, Lived: Thibodaux) where my dad ran a small restaurant, I ate all sorts of food from beignets to gumbo. So when they told me I would be able to taste test the Jambalaya for Universal’s Mardi Gras, I jumped at the chance.

I was not disappointed. The combination of mouth-watering flavors and spices will make you think you are in the heart of New Orleans.

Jambalaya Recipe from Universal’s Mardi Gras

Ingredients

  • 4 tbsp olive oil
  • 1 tbsp garlic peeled, minced
  • 1/4 cup onions, diced small
  • 1/4 cup celery, diced small
  • 1/8 cup green peppers, diced small
  • 3/4 cup sausage andouille
  • 1/4 cup tasso ham
  • 3/4 cup white rice
  • 2 cups chicken stock
  • 1/4 cup black eyed peas, frozen
  • 2 tbsp tomato puree
  • to taste, salt
  • 2 bay leaves, whole
  • 1/2 tsp cayenne pepper
  • 1/2 tsp oregano
  • 1 tsp rosemary
  • 1tsp thyme
  • 1 cup chicken breast, diced
  • 1/2 cup bay shrimp, uncooked
  • 1 tomato, peeled, seeded and diced

Directions

  1. In a 4 quart sauce pan or pot add olive oil and heat on medium-high
  2. Add the Tasso and Andouille Sausage and sauté until crisp
  3. Next add onions, celery, pepper and garlic and continue to cook for 5 minutes
  4. Add chicken and continue cooking 5 to 7 minutes mixing constantly
  5. Add tomato, tomato puree, all seasonings and chicken stock and bring to a boil
  6. Add rice and shrimp, stir, and lower to a simmer and cover and cook slowly until rice is tender
  7. Adjust seasoning to taste, and serve warm
